carrot cake oat muffins

1/2 cup oat flour

3 tbsp coconut flour

1 tsp baking powder

1/2 tsp cinnamon 

1/4 tsp cardamom 

1/4 tsp ginger

1/8 tsp vanilla bean

1/8 tsp cloves

1/8 tsp salt

1/2 cup chopped walnuts

2 flax eggs or eggs

2 banana

1 medium carrot 

1/2 zucchini 

1 cup mashed sweet potato 

12 walnuts

1 tbsp hazelnut oil

shred carrot and zucchini in the food processor. mash the bananas and sweet potato. add them and flax eggs/eggs to the carrot/zucchini mix and stir until well mixed. add the dry ingredients. Preheat the oven to 350 F /180 C. place paper baking cups in muffin pan and fill with mix and top with a walnut and drizzle with hazelnut oil. bake for 15 min
