filled gingerbread energy balls

1 cup dates

1/2 cup walnuts

1/2 cup hazelnuts

1/2 tsp cinnamon

1/2 tsp gingerbread spice

filling:

12 dried unsweetened cherries

coating:

1 tbsp 100 % cacao powder

1 tbsp fine grounded dates

process ingredients in a food processor until it becomes a dough. use a small scoop to form 12 round patties and form a little hollow with your thumb in the middle, then press a dried cherry into the hollow and form the dough around the cherry to a ball with your hand. mix the cocoa powder and the shredded dates in a bowl. put each ball into the bowl and roll it around until they're  evenly coated. let them chill in the fridge for an hour.

you can store them in the fridge up to one week or in the freezer up to 3 month.
